Blistered green beans with walnut sauce

I've been cooking green beans in a dozen ways lately. They can be found all over the markets at the moment and as a bonus we also had a good harvest in our garden this year. These bubble green beans were the standout green bean recipe of the season.

Puffed up in a scorching pan, paired with a favorite garlic walnut sauce and garnished with extra roasted walnuts and some grated cheese. Simple and incredibly good. You can prepare the sauce in advance and then when you're done you are literally less than ten minutes from green bean perfection.

Do I have to cut the green beans?

This is basically up to you. I often don't bother with the topping and tailing of each bean, especially when the beans are still fresh and tender. You cook these pretty intensely so keep that in mind. However, cutting off stems or hard spots is recommended.

Some variations

There are a number of alternative directions you can take! For a flavorful version, you can top the green beans with a dash of chili oil or toasted sesame chili oil. If you love herbs, pour chopped basil, mint, chives and / or marjoram over the green beans after they are cooked. Or make a meal out of it. I enjoyed this over a bowl of pasta with extra walnut sauce. So good! The bubbly green beans and walnut sauce are also A + over plain brown rice.
