I'm pretty obsessed with those low-carb bowls that use shredded sautéed Brussels sprouts as a base. The smoky ground pork is the perfect addition, and the runny egg on top makes it sassy and delicious. If you don't eat pork, use ground beef instead. This flavorful pork bowl is very easy to prepare and great for making meals. You can even freeze the shells without the egg. I season the ground pork with a mixture of Mexican spices, including smoky paprika, ancho chili powder, cayenne pepper, oregano, cumin, salt, and black pepper. The meat is so aromatic!

Can you put Brussels sprouts in a food processor?

Yes, adding Brussels sprouts to your food processor is a great way to save time chopping up Brussels sprouts. Just attach the cutting blade and you will be ready in no time! You can also buy pre-shredded Brussels sprouts at the grocery store if you don't have time to cut them by hand.

Pork Brussels Sprouts Bowl Tips & Variations:

Swap your protein: Replace the pork with the minced meat you want. Try it with lamb, chicken, turkey, beef or go meatless with Impossible Burger or Beyond Meat.

Add a grain: If you want to get more servings out of this bowl recipe, serve over brown rice or quinoa for even more plumpness.

For food preparation: Divide into four meal preparation containers. Cover and store in the refrigerator for up to four days. To heat up, heat the microwave at 30 second intervals.

How to Freeze: Freeze without an egg for up to three months. Place in the refrigerator to heat up or reheat in 30 second intervals from frozen to reheat.

Spicy Pork Brussels Bowls are a delicious low-carb meal made with ground Brussels sprouts as a base, smoky ground pork and an egg on top!

  • Olive oil spray
  • 1 lb 90% lean ground pork, or swap it for a meatless ground beef option
  • 2 tablespoon Red wine vinegar
  • 3 Cloves garlic, chopped
  • 1 teaspoon smoky paprika
  • 2 teaspoon Ancho chili powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon Cayenne pepper
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • 6th cups crushed Brussels sprouts
  • 1/4 Cup chopped onion
  • 4th Big eggs
  • Heat a large cast iron or heavy non-stick pan over medium heat, spray some oil, and cook the meat into small pieces.

  • Combine spices in a small bowl.

  • Add the garlic, season with spices and vinegar, and cook for 8 to 10 minutes until they are brown and no longer pink in the center.

  • To put on a plate.

  • Add the brussels and onions to the pan and cook over a high heat, stirring occasionally, until the brussels begin to brown and are tenderly crispy, 6 to 7 minutes.

  • Return the pork to the pan and mix for 1 to 2 minutes.

  • Heat a non-stick pan and spray oil on it when you're boiling the eggs. Cover them until the whites are just set and the yolks are still runny (2 to 3 minutes).
