<p>My daughter loves these mini frozen bagel pizzas so I wanted to make an easy Pepperoni Pizza Bite recipe from scratch. I figured making bagels and then topping them with pizza ingredients was going to take too long, so I streamlined them and made them in muffin tins instead. Pepperoni Pizza Bites are like these frozen mini bagel pizzas only made from scratch in a muffin pan using my Greek Yogurt Bagel Batter.

  • Olive oil spray
  • 1 Cup unbleached all-purpose flour, Whole Wheat or Gluten Free Blend*, (5 oz weight)
  • 2 teaspoon baking powder, Make sure it hasn't expired or it won't rise
  • 3/4 teaspoon kosher salt, Diamond crystal, use less if using table salt or mortons
  • 1 Cup fat-free greek yogurt, not regular yogurt, it gets too sticky (I recommend Stonyfield)
  • 2/3 Cup Marinara or pizza sauce
  • 1 Cup shredded semi-skimmed mozzarella cheese
  • 1 ounce turkey pepperoni, chopped
  • Crushed red pepper flakes, for serving (optional)
  • Preheat oven to 375˚F and grease two 12-cup muffin tins with oil.

  • In a medium bowl, combine flour, baking powder, and salt and whisk well.

  • Add the yogurt and mix with a fork or spatula until well combined, it looks like little crumbles.

  • Lightly dust a work surface with flour and remove the dough from the bowl, knead the dough a few times until the dough is sticky but not sticky, about 15 turns (it shouldn't leave any dough on your hand when you knead it move away).

  • Divide the dough into 16 equally sized small balls (about 25 grams each).

  • Press each ball into the bottom of the muffin cups and let them rise slightly up the side.

  • Bake for 15 minutes, remove from the oven and gently press the balls down in the middle to make a small well.

  • Sprinkle each scoop with 2 teaspoons sauce, 1 tablespoon cheese, and a pinch of pepperoni.

  • Return to the oven and bake for 3 minutes or until cheese is melted.

  • Remove from the oven and let cool for 2 minutes. Using a paring knife or offset metal spatula, carefully remove the bites and slice around the top to remove any cheese that may be stuck to the pan.

  • Spray the pan again and repeat the process with the remaining batter and toppings.
