Mango breakfast chia pudding

I felt like my breakfast needed a touch of inspiration and this mango breakfast chia pudding is a step in the right direction. It's creamy made from nut milk, naturally sweetened with pure mango puree, and you can top it with as many nuts, seeds, and powders as you like.

Chia pudding for breakfast! Start the day strong.

Today's recipe is super simple. First of all, I love chia for breakfast. Chia seeds are high in protein and fiber and the richest vegetable source of omega-3 fatty acids. Read more about why chia is often viewed as a superfood here. In practice, they keep me full, are great remedies for flavors I love, and they are wonderfully versatile.

Do it how you want

This chia pudding is super nutritious. It's vegan, dairy-free, gluten-free, and naturally sweetened. As I mention above, you can step it up with as little or as many toppings as you want. If you look at the photo below, you'll see roasted almonds, shichimi tgarashi seasoning (or a pinch of cayenne pepper), bee pollen, frozen mango mashed with a hand blender, banana chips, quinoa crispies or crispy brown rice.

Chia seeds are also just generally cool. Because of the way chia seeds expand and gel, the whole concept of chia pudding works. Additionally, you can sprout chia seeds, use them to thicken dressings, or as a base for chia puddings like this one. They are amazing!

Add some crunch!

Lastly, the crunch factor, let's talk about it! It is important. I like crispy toppings on chia pudding, and the more the better. It's in contrast to the way chia gels are made. Banana chips are great, quinoa crispies are another favorite, and you can't go wrong with toasted nuts and seeds. Enjoy!
