You can whip these up in less than 15 minutes. They're perfect for a morning or afternoon snack, or for an after-dinner dessert. I store my energy balls in the freezer (I like them super cold), but you can also keep them in the fridge. And for a healthy chocolate dessert version, these chocolate fondant snowballs are delicious and great for the holidays.

What is an energy ball?

Energy balls are full of nutritious and immune-boosting foods! Pumpkin is full of beta-carotene as well as fiber and minerals. Pistachios and cashews are full of good fats, and cinnamon is loaded with antioxidants. And for the sweetness, I used Medjool dates instead of sugar.
