  • Olive oil spray
  • 2 lb carrots, peeled and cut diagonally into 1/2-inch pieces (6 heaping cups)
  • 2 tablespoon Extra virgin olive oil
  • 1 tablespoon chopped fresh thyme leaves
  • ¼ Cup chopped fresh Italian parsley, plus more for garnish
  • 3 Garlic cloves, chopped
  • 2 teaspoon kosher salt
  • Freshly ground black pepper, taste
  • Preheat oven to 400F. Spray a large sheet pan with oil.

  • In a large bowl, toss the carrots with the olive oil.
