A site for those of us with bumper crops of zucchini. For anyone who doesn't use zucchini often, I hope this gives you a change of mind! It's an incredibly versatile ingredient in season all summer, from June to late August.

The many ways to use zucchini

You can cut zucchini into salads, puree them into delicious soups, spiral them into pasta, bake them into cakes and bread, or even rub them together with other ingredients to make a kind of coleslaw. It goes well with pasta, is wonderfully grilled and is welcome in many soups and stews. I'm adding recipes below for my favorite zucchini uses.

How to store zucchini

Any zucchini that you don't use right away can be canned, pickled, or frozen for later (instructions below). Because with zucchini, unfortunately, you have to use or lose them. When faced with a crop that produces a lot of pumpkin at one time, using it can feel like a part-time job. The good news is that you have options.
