This recipe is one of the best baked oatmeal recipes because you can easily change things up to suit your family's preferences.

  • Swap the blueberries for any other fruit you like. Try bananas, raspberries, strawberries, apples, blackberries … you can really do anything.
  • If you want a little more crunch and substance, try adding some nuts. My favorite are pecans in this recipe.

After that, it's just as easy to mix the ingredients together, pour them into the baking dish, and enjoy a warm spoonful of hearty baked oatmeal 20 minutes later.

  • 2 big egg
  • 1/2 Cup Applesauce, unsweetened
  • 5 tablespoon honey
  • 1 tablespoon Vanilla extract
  • 2 teaspoon cinnamon
  • 1/2 teaspoon Salt-
  • 2 teaspoon baking powder
  • 3 Cup Oats, dry
  • 1 Cup milk
  • 1 Cup Blueberries

Serve with

  • 1 Cup Greek yogurt, plain
  • 1/4 Cup honey to drizzle on top (optional)
  • Preheat the oven to 350 degrees. Spray a 9×13 inch baking dish with cooking spray.

  • Whisk eggs, applesauce, honey, vanilla and cinnamon together. Add salt, baking powder, oats and milk. Stir until everything is well mixed. Fold in blueberries.

  • Transfer to a prepared baking dish and bake for 25-35 minutes, until the mixture has set and the top is browned.

  • Top with yogurt and enjoy!
