- 4 medium red or Idaho potatoes, about 7 ounces each
- Spray with extra virgin olive oil
- Kosher salt
- Chives, sour cream, Greek yogurt, butter, salt and pepper, optional for brushing

Preheat the oven to 425°F and line a baking sheet with foil or parchment paper.

Poke a few holes all over the potatoes with a fork. Place on the baking sheet, drizzle the potato with olive oil and rub all over; Sprinkle everything with kosher salt.

Bake for 50 to 60 minutes or until skin is golden and crispy and potato is tender.

Use a fork to fluff up the inside of the potato before adding your toppings.

Slice each potato. Assemble with all the fixins you like.

Cook the potato for 3 to 4 minutes, then flip it gently and cook for another 3 to 4 minutes.

For each additional potato you prepare, add 1 minute for each side.

If potato is still hard, continue cooking in 1 minute increments until potato is tender.
