Air Fryer Sweet Plantains, or Maduros, are an easy and healthy way to make this classic Latin American side dish.

I grew up eating plantains in every way imaginable! You will get different results depending on how ripe the plantain is. Mom makes them on the grill or fry them, but I love making them in the air fryer! For sweet Maduros, the best plantains are those with black skin and tender flesh. The darker the skin, the cuter they are, and that’s exactly what you want. Make these Air Fryer Maduros along with my picadillo, carne bistec, or any other Latin dish you like. Air fried plantains are healthier than fried plantains because air frying requires much less oil. They are similar to bananas but contain more starch. Plantains are high in carbohydrates and contain some fiber, magnesium, potassium, and vitamins A and K.

What color are plantains when they are ripe?

As they ripen, plantains turn from green to yellow to black, just like bananas. It’s usually difficult to find ripe plantains at the grocery store. Usually you have to buy unripe green plantains and let them ripen on the counter or in a warm place to speed up the process. They can last from a few days to one
week ripen.

What is the difference between Tostones and Maduros?

Tostones are green plantains that are fried until crisp and served as chips with dips like guacamole or salsa. I have three ways to make them: twice baked, air fried and microwaved, and baked. Made from ripe plantains, maduros are soft and sweet and served as a side dish.

How to air fry maduros

Air frying sweet plantains is so easy. This recipe only has one ingredient—plantains—so prep is minimal.

  1. Cut off the ends of the plantain. Then use a paring knife to cut a slit along the skin.
  2. Carefully remove the skin and place in the air fryer.
  3. Spray the tops of the plantains with oil and air fry at 370 degrees Fahrenheit for eight minutes on each side.

  • Add melted cheese like shredded cheddar, Monterey Jack, or Oaxaca cheese.

Air Fryer Sweet Plantains, or Maduros, are an easy and healthy way to make this classic Latin American side dish.

  • 2 Middle extra ripe plantains, The skin should be black
  • Spray the Airfryer basket with olive oil.

  • Cut off the ends of the plantain, then use a sharp pairing knife to slice a slit down the length to peel.

  • Carefully remove the skin and place in the air fryer basket.

  • Spray with more oil and air fry at 370F until tender, about 8 minutes on each side.

  • Then slice and enjoy.
